Karlos Knott, founder and brewmaster of Bayou Teche Brewing produces four year-round beers that are uniquely formulated to celebrate the region's Cajun heritage, and pair well with Creole and Cajun cuisine. We spend a morning with founder and brewmaster Karlos Knott, as he discusses how he developed each recipe, and how his beer honors his grandfather.

Knott also shares the importance of the French language, and how his parents were stigmatized for speaking it in school. In 2011, Knott collaborated with Louis Michot of the Lost Bayou Ramblers, Louisiana Folk Roots, and the Lafayette Convention and Visitors Commission to produce "En Francais – Cajun and Creole Rock and Roll," French translations of traditionally American rock favorites. The CD may be purchased through iTunes.

Afterward we stop in Baton Rouge for a visit to the LSU Rural Life Museum.
